Instructions

  • Cream the softened butter and powdered sugar together in a stand mixer or with an electric hand mixer for 3-5 minutes, until light and fluffy.
  • Gradually add the all-purpose flour and salt to the butter mixture. Mix just until the ingredients are combined. Be careful not to overmix.
  • Stir in the vanilla extract.
  • If the dough is too soft to handle, wrap it in plastic wrap and chill it in the refrigerator for 30 minutes.
  • Preheat oven to 325°F (160°C).
  • Use a cookie scoop or spoon to drop rounded tablespoons of dough onto ungreased baking sheets.
  • Bake for 10-12 minutes, or until the edges are just barely golden. Shortbread cookies should be pale.
  • Let the cookies cool completely on the baking sheet before transferring them to a wire rack. They are very delicate when warm.
  • Dust with powdered sugar, dip in chocolate, or serve as sandwich cookies.
