  • 1 tablespoon olive oil
  • 1 pound lean ground turkey (93% lean or higher)
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 2 (15 ounce) cans cannellini beans, rinsed and drained
  • 4 cups low-sodium chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Optional toppings: sour cream, shredded cheese, avocado, cilantro, green onions, lime wedges

Instructions

  • Heat the olive oil in a large pot or Dutch oven over medium heat. Add the ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  • Add the onion and garlic to the pot and cook until softened, about 5 minutes. Add the bell peppers and cook for another 3 minutes.
  • Stir in the diced tomatoes, cannellini beans, chicken broth, chili powder, cumin, and oregano. Season with salt and pepper to taste.
  • Bring the chili to a boil, then reduce heat and simmer for at least 30 minutes, or longer for a richer flavor. Stir occasionally.
  • Taste and adjust the seasoning as needed. Serve hot with your favorite toppings.
