This easy-to-make toffee features a buttery, crunchy base loaded with pecans, topped with a smooth layer of melted milk chocolate.

Ingredients

  • 1 cup coarsely chopped pecans
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • ½ teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 1 cup milk chocolate chips

Instructions

  1. Spray a 9-inch square baking dish with cooking spray.
  2. Line the sprayed baking dish with parchment paper.
  3. Spread the coarsely chopped pecans in a single layer on top of the parchment paper.
  4. Add butter, sugar, and salt to a heavy-bottomed 3-quart pot.
  5. Place the pot over medium-low heat.
  6. Bring the mixture to a boil, stirring frequently to dissolve the sugar.
  7. Once the candy is boiling, stir occasionally, slowly and evenly.
  8. Continue cooking until the candy reaches 290°F to 300°F on a candy thermometer (hard crack stage).
  9. Once the candy reaches 290°F-300°F, remove the pot from the heat.
  10. Gently stir in the vanilla extract.
  11. Carefully pour the hot toffee mixture over the chopped pecans in the prepared baking dish.
  12. Let the toffee sit, undisturbed, for a few minutes.
  13. Sprinkle the milk chocolate chips evenly over the top of the toffee.
  14. Cover the baking dish with foil.
  15. Let the covered dish sit for 5 minutes, or until the chocolate has softened.
  16. Remove the foil.
  17. Gently spread the softened chocolate into an even layer using an offset spatula or the back of a spoon.
  18. Place the baking dish with the toffee in the refrigerator.
  19. Let the toffee cool completely for at least 2 hours.
  20. Lift the parchment paper with the toffee out of the baking dish.
  21. Place the toffee on a cutting board or solid surface.
  22. Use a knife to gently break the toffee into smaller pieces.
  23. Store the finished toffee in an airtight container in a cool place.

Notes

Always use a heavy-bottomed pot for even heating.
Invest in a reliable candy thermometer for accurate temperature readings.
Chill the toffee completely for at least 2 hours for the best snap.
Parchment paper is essential for easy removal from the pan.
