Ingredients

  • White Chocolate Chips: 2 cups
  • Heavy Cream: 2 tablespoons
  • Blue Curacao: 2 tablespoons
  • Sanding Sugar: 1/2 cup

Instructions

  1. Combine 2 cups of white chocolate chips with 2 tablespoons of heavy cream in a microwave-safe bowl.
  2. Heat the mixture in the microwave for 30-second intervals at half power.
  3. Stir thoroughly after each interval until the mixture achieves a smooth and creamy consistency.
  4. Add 2 tablespoons of blue curacao to the smooth chocolate mixture.
  5. Stir the mixture until the blue curacao is fully integrated and the color is even.
  6. Cover the bowl with plastic wrap.
  7. Refrigerate the mixture for approximately two hours, or until firm enough to roll.
  8. Line a baking sheet with parchment paper.
  9. Pour 1/2 cup of sanding sugar into a separate shallow bowl.
  10. Measure out heaping teaspoons of the chilled chocolate mixture.
  11. Roll the measured chocolate into smooth balls.
  12. Roll these balls in the sanding sugar until they are fully coated.
  13. Place the sugar-coated truffles on the parchment-lined baking sheet.
  14. Refrigerate the tray for an additional hour to allow the truffles to set properly.
  15. Keep the truffles refrigerated until ready to serve.

Notes

Use good quality white chocolate for the best flavor and texture.
Ensure your hands are cool when rolling to prevent the chocolate from melting too quickly.
Do not overheat the chocolate in the microwave; stir frequently to prevent seizing.
These truffles are best enjoyed chilled, so keep them refrigerated until serving.
