A festive and moist quick bread bursting with colorful sprinkles and topped with a sweet vanilla glaze, perfect for the holidays.

Ingredients

  • ½ cup unsalted butter softened
  • 1 cup granulated sugar
  • 2½ teaspoons vanilla extract
  • 3 large eggs
  • ½ cup sour cream
  • ¼ cup whole milk
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 teaspoon salt
  • ½ teaspoon ground cinnamon
  • ⅔ cup Christmas sprinkles plus more for topping
  • 1¼ cups powdered sugar
  • 2 tablespoons heavy cream
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F.
  2. Spray a 9×5-inch loaf pan with non-stick cooking spray.
  3. Set the loaf pan aside.
  4. In a large bowl, cream together the softened butter and granulated sugar with a hand mixer until light and fluffy.
  5. Add the eggs and 2½ teaspoons of vanilla extract to the creamed mixture.
  6. Mix just until combined.
  7. Mix in the sour cream and whole milk until fully incorporated.
  8. Set the wet ingredients aside.
  9. In a separate large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and ground cinnamon.
  10. Add the dry ingredients into the wet ingredients.
  11. Stir until just combined and no flour streaks remain.
  12. Gently fold in the ⅔ cup of Christmas sprinkles, being careful not to overmix.
  13. Spread the batter evenly into the prepared loaf pan.
  14. Bake for about 60 to 70 minutes, or until a toothpick inserted into the center comes out clean and the top is golden.
  15. Remove the bread from the oven.
  16. Cool in the pan for 5 minutes.
  17. Transfer the bread to a wire rack to cool completely.
  18. While the bread cools, make the glaze.
  19. In a bowl, whisk together the powdered sugar, heavy cream, and 1 teaspoon of vanilla extract until smooth.
  20. Once the bread is completely cool, spread the icing over the cooled bread.
  21. Smooth the icing out with a rubber spatula.
  22. Sprinkle with extra sprinkles if desired.
  23. Let the icing set before slicing and serving.

Notes

Ensure butter and eggs are at room temperature for best results.
Do not overmix the batter once flour is added to keep the bread tender.
Cool the bread completely before icing to prevent the glaze from melting.
Use good quality sprinkles to avoid color bleeding into the batter.
