Festive, no-bake Christmas Cornflake Wreath Cookies made with a sweet marshmallow base and crunchy cornflakes, decorated with red-hot candies.

  • 1/2 cup unsalted butter
  • 30 large marshmallows (about 3 cups)
  • 1 Tablespoon green food coloring
  • 1 teaspoon vanilla extract
  • 4 cups cornflakes
  • Cinnamon red-hot candies
  • Cooking Spray

Instructions

  1. Melt the butter in a large saucepan over low heat.
  2. Add the marshmallows to the melted butter.
  3. Stir constantly with a wooden spoon until the marshmallow mixture is smooth.
  4. Remove the saucepan from the stove.
  5. Add the green food coloring to the smooth marshmallow mixture.
  6. Add the vanilla extract to the marshmallow mixture.
  7. Stir to combine the food coloring and vanilla extract evenly.
  8. Add the cornflakes to the green marshmallow mixture.
  9. Stir the mixture constantly until all the cornflakes are evenly coated.
  10. Place a large piece of parchment paper on the counter.
  11. Spray the parchment paper lightly with cooking spray.
  12. Quickly form the cornflake mixture into individual wreaths.
  13. Make a small hole in the center of each mound of cornflake mixture.
  14. While the cornflakes are still warm, place the red-hot candies atop the wreaths for garnish.
  15. Allow the Christmas Cornflake Wreath Cookies to cool completely before serving.
