A festive, easy-to-make no-bake chocolate treat packed with marshmallows, pistachios, and glacé cherries, perfect for the holidays.

Ingredients

  • 200 g (7 oz) milk chocolate – cut into even pieces
  • 100 g (3.5 oz) dark chocolate – cut into even pieces
  • 20 g (¼ cup) desiccated coconut
  • 80 g (1 cup) white marshmallows – quartered
  • 45 g (⅓ cup) pistachios – unsalted/shells removed
  • 100 g (½ cup) glacé/candied red cherries – halved
  • 100 g (3.5 oz) white chocolate
  • 2 tablespoon red m&m's – or other candy
  • 1 teaspoon silver cachous

Instructions

  1. Line an 18 cm x 13 cm (7 inch x 5 inch) slice tin with baking paper.
  2. Place the desiccated coconut, quartered marshmallows, pistachios, and cherries in a bowl.
  3. Prepare a bain-marie or double boiler by placing a heatproof bowl over a pan of barely simmering water, ensuring the bowl does not touch the water.
  4. Add the chopped milk and dark chocolate pieces to the heatproof bowl.
  5. Stir the chocolate with a metal spoon or spatula until it has almost melted.
  6. Remove the bowl from the heat; the residual heat will melt the remaining chocolate.
  7. Let the melted chocolate cool for a couple of minutes.
  8. Pour the slightly cooled chocolate into the bowl with the marshmallows, coconut, pistachios, and cherries.
  9. Stir well until all ingredients are completely covered in the chocolate.
  10. Pour the mixture into the prepared tin.
  11. Flatten the top down with a spatula or metal spoon.
  12. Place the tin in the refrigerator for 30 minutes to chill slightly.
  13. In a clean bowl, melt the white chocolate.
  14. Drizzle the melted white chocolate over the slightly chilled rocky road.
  15. Decorate immediately with red m&m's and silver cachous.
  16. Place the tin back in the fridge for 2 hours, or until completely set.
  17. Remove the rocky road from the fridge 15-30 minutes before cutting for easier slicing.
  18. Cut the rocky road into 10 pieces using a warm, sharp knife.
  19. Store in an airtight container in the fridge.

Notes

Use good quality chocolate for the best flavor and texture.
Ensure your bowl doesn’t touch the water when melting chocolate to prevent seizing.
Let the melted chocolate cool slightly before mixing with other ingredients.
For clean cuts, warm your knife under hot water and wipe dry between slices.
Get creative with your toppings! Sprinkles, crushed candy canes, or different candies work great.
