Whimsical, melt-in-your-mouth meringue cookies shaped like Christmas trees, perfect for holiday celebrations.

Ingredients

  • 4 egg whites at room temp
  • 1 Cup granulated sugar
  • pinch cream of tartar
  • 1/8 tsp almond extract
  • green gel food coloring
  • multi color sprinkles
  • star sprinkles
  • frosting of your choice

Instructions

  1. Preheat your oven to 200 degrees Fahrenheit.
  2. Place egg whites, granulated sugar, and cream of tartar in a large heatproof bowl, preferably the bowl of your stand mixer.
  3. Set the bowl over a pot of gently boiling water on the stove; ensure the bottom of the bowl does not touch the water.
  4. Whisk the mixture vigorously and continuously until the sugar is completely dissolved and no granules are visible when rubbed between your fingers.
  5. Remove the bowl from the heat.
  6. Whisk in the almond extract.
  7. Attach the whisk attachment to your stand mixer.
  8. Beat the egg white mixture on medium-high speed until the egg whites become bright white and slightly thickened, but still runny.
  9. Add green gel food coloring a little at a time until you reach your desired Christmas tree green color.
  10. Continue to beat the mixture on medium-high speed until very stiff peaks form.
  11. Spoon the meringue mixture into a piping bag fitted with a large star tip.
  12. Pipe cookies onto a baking sheet lined with parchment paper or a silicone mat.
  13. Form cookies that are approximately 1 inch in width and 2 inches high.
  14. Space the cookies about 1 inch apart on the baking sheet.
  15. Immediately sprinkle the piped cookies with multi-color sprinkles.
  16. Place the baking sheet in the preheated oven and bake for 2 hours.
  17. After 2 hours, turn off the oven.
  18. Slightly open the oven door and let the cookies sit in the cooling oven for an additional 2 hours to dry out completely.
  19. Once cooled, place a star sprinkle on top of each cookie using a tiny dab of frosting to secure it.
  20. Serve and enjoy your festive Christmas Tree Cookies!

Notes

Ensure all your equipment (bowls, whisks) are completely clean and grease-free, as any fat can prevent egg whites from whipping.
Do not open the oven door during the baking or cooling process, as sudden temperature changes can cause the meringue to crack.
For best results, use room temperature egg whites; they whip to a higher volume.
Store cooled, undecorated meringue cookies in an airtight container at room temperature for up to a week.
