Transform your hearty Irish stew into individual, golden-crusted pies, perfect for a comforting and satisfying meal.

  • 1 pack puff pastry
  • 30 oz irish stew
  • canola oil spray
  • 1/4 tsp garlic powder
  • 1 large egg
  • 2 tsp water
  • 1/2 tsp pepper
  • 1/2 tsp salt
  • 3 tbsp black sesame seeds

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Drain your Irish stew thoroughly through a fine-mesh strainer.
  3. Gently press the solids to remove excess thin liquid from the stew.
  4. In a small bowl, whisk together the egg with 2 teaspoons of water until well-beaten and glossy.
  5. Set the egg wash aside.
  6. In another small bowl, combine the salt, pepper, and garlic powder.
  7. Set the seasoning mixture aside.
  8. Lightly spray your pie tins with canola oil.
  9. Remove the puff pastry from its package.
  10. Let the pastry sit at room temperature for 2-3 minutes to soften slightly.
  11. Cut the pastry into pieces sized for your pie tins.
  12. You will need one piece for each base and one for each top.
  13. Press the pastry bases gently into the oiled tins.
  14. Ensure the pastry settles into the bottom and sides without stretching.
  15. Divide the drained stew evenly among the pie tins.
  16. Fill each tin about halfway with stew.
  17. Lightly brush the rim of each pastry base with some of the egg wash.
  18. Place the pastry tops over each filled pie.
  19. Gently press the edges together to seal them firmly.
  20. Brush the top of each pastry generously with the remaining egg wash.
  21. Sprinkle the black sesame seeds evenly over the tops.
  22. Press the sesame seeds gently so they adhere to the pastry.
  23. Using a sharp knife, cut 2-3 small slits in the center of each pastry top.
  24. Bake at 180°C (350°F) for 40 minutes.
  25. Bake until the pastry is deeply golden and puffed.

Notes

Always drain your stew thoroughly to prevent a soggy pie bottom.
Allow puff pastry to sit for a few minutes at room temperature for easier handling.
A generous egg wash creates a beautiful golden, glossy crust.
Cut steam vents in the top crust to prevent bursting during baking.
