A quick and easy savory-sweet ramen dish featuring tender chicken, coleslaw mix, and fresh ginger.

Ingredients

  • 2 pkgs ramen
  • 2 tsp olive oil
  • 3 cups coleslaw mix (shredded finely into 1/8-inch strips)
  • 1.5 cups chicken (cut into 1/2-inch bite-sized cubes)
  • 1/2 cup teriyaki sauce
  • 1/2 tsp fresh grated ginger
  • 2 green onions

Instructions

  1. Bring 4 cups of water to a boil in a large pot.
  2. Cut the chicken into 1/2-inch bite-sized cubes.
  3. Slice the green onions.
  4. Once water is boiling, add the ramen noodles.
  5. Cook the ramen noodles for exactly 3 minutes.
  6. Reserve 1 cup of the noodle cooking water.
  7. Drain the noodles in a colander and set aside.
  8. Heat the olive oil in a large skillet or wok over medium-high heat.
  9. Add the coleslaw mix to the skillet.
  10. Cook the coleslaw mix for 3 minutes, stirring occasionally, until it begins to soften and develop slight color.
  11. Add the cooked noodles from Step 1 to the pan.
  12. Add the raw chicken cubes to the pan.
  13. Add the teriyaki sauce to the pan.
  14. Toss everything together to combine.
  15. Pour in the reserved 1 cup of noodle water.
  16. Add the fresh grated ginger to the skillet.
  17. Simmer everything together for 2 minutes, stirring gently.
  18. Ensure the chicken is cooked through and the flavors meld together.
  19. Divide the teriyaki ramen into bowls.
  20. Top each bowl with the sliced green onions.
  21. Serve immediately while hot.

Notes

Cook ramen noodles for exactly 3 minutes to avoid mushiness.
Always use fresh grated ginger for the best flavor.
Don’t forget to reserve the noodle cooking water for the sauce.
Ensure your skillet is hot for proper stir-frying.
