Try this foolproof crockpot corned beef and cabbage recipe for a delicious meal

Ingredients

  • 3-4 lbs corned beef brisket
  • 1 onion, peeled and quartered
  • 4 cloves of garlic, minced
  • 1 small head of cabbage, cut into wedges
  • 8 small red potatoes, halved
  • 4 carrots, peeled and cut into chunks
  • 4 cups beef broth
  • 1 tablespoon whole peppercorns
  • 2 bay leaves

Instructions

  • Place the quartered onion and minced garlic at the bottom of the crockpot.
  • Place the corned beef brisket on top of the onion and garlic.
  • Arrange the cabbage wedges, halved potatoes, and carrot chunks around the beef.
  • Add the beef broth, peppercorns, and bay leaves to the crockpot.
  • Cover and cook on low for 8-10 hours or on high for 4-6 hours until the meat is tender.
  • Remove the beef and slice against the grain. Serve with the vegetables and broth.
