A festive and fun giant Pop Tart shaped like a gingerbread house, filled with warm cinnamon brown sugar and topped with two delicious icings.

Ingredients

  • 2½ cups all purpose flour
  • 1 teaspoon salt
  • 2 teaspoons granulated sugar
  • ½ teaspoon cinnamon
  • 1 cup unsalted butter cold, cubed
  • 3-4 tablespoons water cold
  • 1 egg
  • 2 teaspoons water
  • ½ cup light brown sugar
  • 2 teaspoons cinnamon
  • 1 tablespoon all purpose flour
  • ¼ teaspoon salt
  • ¼ teaspoon vanilla extract
  • ¾ cup powdered sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 1 tablespoon whole milk, heavy cream or water
  • ½ cup powdered sugar
  • 2 tablespoon heavy cream or milk

Instructions

  1. Fill a small bowl with cold water and an ice cube.
  2. Chop butter into cubes.
  3. Place butter in the fridge or freezer for about 15 minutes.
  4. In a food processor, pulse to combine the flour, cinnamon, sugar, and salt.
  5. Add the cubed butter.
  6. Pulse until the dough resembles wet sand.
  7. Add ice water one tablespoon at a time.
  8. Continue to pulse mixture until it is just combined.
  9. Turn dough out onto a sheet of plastic wrap.
  10. Divide dough in half.
  11. Place each half on a separate sheet of plastic wrap.
  12. Loosely wrap each ball in plastic wrap.
  13. Gently press each dough ball into a flat oval disk.
  14. Place each disk in the fridge for at least 30 minutes.
  15. While dough chills, prepare the egg wash.
  16. In a small bowl, whisk together the egg and 2 teaspoons water for the egg wash.
  17. While dough chills, prepare the cinnamon brown sugar filling.
  18. Stir together the brown sugar, cinnamon, 1 tablespoon flour, vanilla, and salt for the filling.
  19. Line two baking sheets with parchment paper.
  20. Cut out a gingerbread house template from parchment paper.
  21. Generously flour your counter.
  22. Remove one dough disk from the fridge.
  23. Gently roll the first disk out on your floured counter into a 9″ x 12″ rectangle.
  24. Use a pizza cutter or knife to trim the edges.
  25. Carefully transfer dough to a baking sheet.
  26. Place the baking sheet in the fridge.
  27. Roll out the second dough disk to the same 9″ x 12″ size.
  28. Brush the edge of the first crust with a 1-inch border of egg wash.
  29. Spoon and spread a thick layer of the cinnamon brown sugar filling over the dough, leaving a 1-inch border.
  30. Carefully place the top crust over the bottom crust.
  31. Gently press the edges of the dough with your fingertips to seal the top and bottom crusts together.
  32. Use a fork to crimp the edges.
  33. Use a fork or a toothpick to poke holes throughout the dough.
  34. Place in the fridge for 30 minutes.
  35. Preheat oven to 375°F.
  36. Remove dough from fridge.
  37. Brush all over with the egg wash.
  38. Bake for 20-23 minutes or until golden brown.
  39. Rotate the pan halfway through cooking.
  40. Remove from oven and allow to cool completely before icing.
  41. Prepare Cinnamon Icing: Stir together ¾ cup powdered sugar, ½ teaspoon vanilla extract, ½ teaspoon cinnamon, and 1 tablespoon whole milk, heavy cream or water.
  42. Prepare Powdered Sugar Icing: Stir together ½ cup powdered sugar and 2 tablespoons heavy cream or milk.
  43. Spread the cinnamon icing over the gingerbread house using the back of a spoon, an offset spatula, or a spatula.
  44. Pipe some powdered sugar icing over the roof and windows of the house to look like snow.
  45. Use a piping bag with a small round tip or a sandwich bag with a snipped corner for piping.
  46. Sprinkle some sprinkles or sanding sugar on the icing while it is still wet, if desired.

Notes

Ensure all butter and water are very cold for a flaky crust.
Do not overmix the dough in the food processor; pulse only until just combined.
Chill the dough for the recommended times to make it easier to handle and prevent shrinking.
Allow the Gingerbread Pop Tart House to cool completely before applying any icing.
For easier handling, use a parchment paper template to cut out your house shape.
