Chewy, sweet, and incredibly easy homemade granola bars packed with oats, Rice Krispies, chocolate chips, and cereal marshmallows.

Ingredients

  • 6 tablespoons unsalted butter
  • 6 tablespoons brown sugar, packed
  • 2/3 cup honey
  • 3 cups rolled oats
  • 1 1/2 cups Rice Krispies cereal
  • 1/2 cups graham crackers, crushed in pieces and crumbs
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 1/2 cup cereal marshmallows

Instructions

  1. Spray an 8×8-inch pan with vegetable oil or baking spray.
  2. Line just the bottom of the pan with parchment paper.
  3. Add the butter, brown sugar, and honey to a small pot over medium heat.
  4. Whisk the mixture continuously until it begins to bubble.
  5. Cook the bubbling mixture for exactly 2 minutes.
  6. Add the oats, Rice Krispies cereal, graham crackers, and salt to a large bowl.
  7. Pour the hot butter mixture over the dry ingredients.
  8. Whisk carefully to combine all ingredients well.
  9. Let the mixture cool for 20 minutes.
  10. Gently add the marshmallows and mini chocolate chips to the cooled mixture.
  11. Press the mixture into the prepared pan gently but slightly packed down.
  12. Place the pan in the refrigerator.
  13. Let the bars solidify in the refrigerator for 2 hours before slicing.

Ensure your brown sugar is packed when measuring for accurate sweetness and texture.
Cooking the butter-sugar-honey mixture for the full 2 minutes after bubbling is crucial for binding.
Allow the mixture to cool for 20 minutes before adding chocolate and marshmallows to prevent melting.
Use parchment paper on the bottom of the pan for easy removal and clean slicing.
