  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1/4 cup Granulated sugar
  • 1/2 cup Unsalted butter, cold and grated or cut into small pieces
  • 1 3/4 cups Buttermilk
  • 1 cup Raisins
  • 1/2 cup Unsalted butter, softened (for Cinnamon Honey Butter)
  • 1/4 cup Powdered sugar (for Cinnamon Honey Butter)
  • 2 tablespoons Honey (for Cinnamon Honey Butter)
  • 1 teaspoon Ground cinnamon (for Cinnamon Honey Butter)
  • 1 teaspoon Vanilla extract (for Cinnamon Honey Butter)
  • 1 pinch Salt (for Cinnamon Honey Butter)

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine flour, baking soda, salt, and granulated sugar. Whisk thoroughly.
  • Incorporate cold unsalted butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces remaining.
  • Stir in the raisins, ensuring they are evenly distributed.
  • Create a well in the center of the flour mixture. Slowly pour in the buttermilk, mixing gently with a wooden spoon or hands until a shaggy dough forms. Do not overmix.
  • Turn the dough onto a lightly floured surface and gently pat and fold a few times to form a round, cohesive ball. Do not knead aggressively.
  • Transfer the dough to the prepared baking sheet. Score a deep ‘X’ on top of the loaf, about half an inch deep, extending almost to the edges.
  • Bake for 40-50 minutes, or until the crust is golden brown and the internal temperature reaches 200-210°F (93-99°C). Tap the bottom of the loaf; if it sounds hollow, it’s done.
  • Transfer the baked soda bread to a wire rack to cool completely.
  • For Cinnamon Honey Butter: In a medium bowl, combine softened unsalted butter, powdered sugar, honey, ground cinnamon, vanilla extract, and a pinch of salt. Beat with an electric mixer until light, fluffy, and combined. Adjust cinnamon or honey to taste.
  • Slice the cooled Irish Soda Bread into wedges and serve generously slathered with Cinnamon Honey Butter.
