These zesty Key Lime Cookies are soft, chewy, and bursting with bright citrus flavor, topped with a sweet lime glaze.

Ingredients

  • 2 cups Almond Flour
  • 3 tablespoons Maple Syrup
  • 2 tablespoons Melted Coconut Oil
  • ¼ cup Lime Juice from 2 key limes
  • 2 teaspoons Lime Zest from the lime, optional
  • ½ teaspoon Almond Extract
  • Lime Glaze:
  • ½ cup Powdered Coconut Sugar
  • 1 tablespoon Lime Juice
  • ¼ teaspoon Vanilla Extract

Instructions

  1. Preheat your oven to 350°F (180°C).
  2. Line a cookie sheet with parchment paper.
  3. In a mixing bowl, combine almond flour, maple syrup, melted coconut oil, freshly squeezed lime juice, almond extract, and lime zest (if using).
  4. Stir the ingredients with a rubber spatula until they start to look dry.
  5. Squeeze the mixture with your hands to form a cohesive cookie dough ball.
  6. If the dough is too dry, add a little extra lime juice until it comes together into a soft dough.
  7. If the dough is too wet, add more almond flour, one teaspoon at a time.
  8. Divide the dough into 9 equal portions.
  9. Lightly oil your hands.
  10. Roll each piece of dough into a ball.
  11. Place each cookie dough ball an inch apart on the prepared baking sheet.
  12. Press the top of each dough ball with the back of a spoon or your fingers to flatten slightly.
  13. Bake the cookies for 12-14 minutes at 350°F (180°C).
  14. Bake until the sides are slightly golden brown.
  15. Let the cookies cool on the baking sheet for 5 minutes.
  16. Transfer the cookies to a cooling rack.
  17. Allow the cookies to cool completely before glazing.
  18. To make the glaze, in a separate mixing bowl, combine powdered coconut sugar, lime juice, and vanilla extract.
  19. Stir until the glaze is thick and smooth.
  20. If the glaze is too thin, add a bit more powdered coconut sugar to thicken it.
  21. Drizzle the glaze on top of the completely cooled cookies.
  22. Optionally, add extra lime zest to decorate or boost lime flavors.
