  • 1 pound elbow macaroni
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 4 cups whole milk
  • 4 cups shredded sharp cheddar cheese

  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup panko breadcrumbs (optional)

Instructions

  • Cook the elbow macaroni according to package directions, until al dente. Drain well.
  • In a large saucepan, melt the butter over medium heat. Whisk in the flour until smooth. Gradually whisk in the milk until smooth. Bring to a simmer, stirring constantly, until the sauce has thickened, about 5-7 minutes.
  • Remove from heat and stir in the cheddar cheese, Monterey Jack cheese, and Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  • Add the cooked macaroni to the cheese sauce and stir to combine.
  • If desired, prepare the breadcrumb topping: In a small bowl, combine the panko breadcrumbs, melted butter, and Parmesan cheese. Sprinkle over the mac and cheese.
  • For extra richness, bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until golden brown and bubbly. If not baking, serve immediately.
