Fun, festive, and deliciously chewy cookies packed with sprinkles and a delightful surprise Oreo cookie center.

  • 3/4 cup unsalted butter, room temperature
  • 2/3 cup brown sugar
  • 2/3 cup white sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1 egg + 1 egg yolk, room temperature
  • 2 1/4 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup rainbow sprinkles
  • 12 Oreo cookies

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Line two cookie sheets with parchment paper.
  3. In a stand mixer fit with the whisk attachment, beat the room temperature butter, brown sugar, and white sugar until light and fluffy, about 3 minutes.
  4. Scrape down the sides of the bowl.
  5. Add the vanilla extract, almond extract, egg, and egg yolk to the butter mixture.
  6. Beat until completely combined, about 1 minute.
  7. Add the flour, baking soda, and salt to the wet ingredients.
  8. Beat until just combined, being careful not to overmix.
  9. Remove the bowl from the stand mixer.
  10. Scrape down the sides of the bowl.
  11. Add the rainbow sprinkles to the dough.
  12. Fold the dough gently to evenly distribute the sprinkles.
  13. Use a 2-ounce cookie scoop to scoop out dough balls.
  14. Place dough balls 2 inches apart onto the prepared cookie sheets.
  15. Take each dough ball and flatten it between your palms.
  16. Place one Oreo cookie in the middle of the flattened dough.
  17. Fold the dough around the Oreo, ensuring it is completely covered.
  18. Roll the dough between your hands to create a round ball.
  19. Repeat with the remaining cookies and Oreos.
  20. Place the cookie trays in the fridge to set for at least 1 hour or overnight.
  21. Bake the chilled cookies for 11 to 13 minutes, or until the edges are set but the centers are still gooey.
  22. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Ensure butter and eggs are at room temperature for best results.
Do not overmix the flour to keep cookies tender.
Chilling the dough is essential to prevent spreading and maintain shape.
