  • 4 chicken breasts (pounded to an even 1-inch thickness)
  • 2 tablespoons extra virgin olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 3/4 cup BBQ sauce (such as Sweet Baby Ray's)

Instructions

  1. Pat the pounded chicken breasts dry with paper towels.
  2. Combine the kosher salt, black pepper, garlic powder, and smoked paprika in a small bowl.
  3. Rub the chicken breasts evenly on both sides with the olive oil.
  4. Generously coat the chicken breasts with the spice mixture.
  5. Preheat your grill to medium-high heat (around 450°F) or preheat your oven to 450°F.
  6. If grilling, allow the grates to heat for at least 5 minutes.
  7. Lightly oil the grill grates to prevent sticking.
  8. If baking, place a rimmed baking sheet in the oven to preheat as well.
  9. For grilling: Place the seasoned chicken breasts directly on the hot grill.
  10. Cook the chicken for 5-6 minutes without moving them.
  11. For baking: Place the seasoned chicken on the preheated baking sheet.
  12. Bake the chicken for 8 minutes.
  13. Flip the chicken breasts.
  14. Cook for 4-5 minutes on the second side (if grilling).
  15. Bake for another 7 minutes (if using the oven).
  16. Brush both sides of the chicken generously with the BBQ sauce.
  17. Cook for 2 minutes per side on the grill.
  18. Cook for 5-8 minutes total in the oven.
  19. Continue cooking until the internal temperature reaches 160°F when checked with a meat thermometer.
  20. Transfer the cooked chicken to a clean plate.
  21. Let the chicken rest for 5 minutes before serving.

Notes

Pound chicken to an even thickness for uniform cooking.
Pat chicken dry for a better sear and crispier exterior.
Season chicken right before cooking to prevent drying out.
Use a meat thermometer to ensure chicken reaches 160°F before resting.
