Bake up tender, flaky scones bursting with bright cranberry and orange flavors, just like your favorite coffee shop treat.

Ingredients

  • 2 and 1/2 cups all purpose flour
  • 2 Tablespoons granulated sugar
  • 2 and 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cut into small cubes
  • 1 cup fresh cranberries, chopped (leave a few whole)
  • Zest from one orange, divided (reserve 2 teaspoons for glaze)
  • 1 cup buttermilk
  • 1 large egg, lightly beaten
  • Glaze
  • 2 teaspoon orange zest
  • 1 cup powdered sugar
  • 2 Tablespoons orange juice

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Line a large baking sheet with parchment paper.
  3. In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, salt, and the majority of the orange zest (reserving 2 teaspoons for the glaze).
  4. Using clean hands or a pastry blender, cut the cold butter cubes into the dry ingredients until the mixture resembles coarse crumbs.
  5. Pour in the buttermilk and stir with a fork until a soft dough just forms.
  6. Gently fold in the chopped cranberries.
  7. Lightly flour your hands and press the dough into a ball.
  8. Sprinkle your work surface with a little all-purpose flour.
  9. Knead the dough gently for 6 to 8 times.
  10. Pat the dough into a 10-inch (25 cm) circle.
  11. Cut the dough circle into 8 wedges using a pastry cutter, sharp knife, or pizza cutter.
  12. Separate the wedges and place them onto the prepared baking sheet.
  13. Brush the tops of the scones with the lightly beaten egg.
  14. Bake in the preheated oven for 13 to 16 minutes, until golden brown.
  15. Transfer the baked scones to a wire cooling rack and let them cool for a few minutes before glazing.
  16. To make the glaze, combine the powdered sugar, orange juice, and the reserved 2 teaspoons of orange zest in a small bowl.
  17. Whisk until smooth, adjusting with more powdered sugar or orange juice if needed to reach a drizzling consistency.
  18. Use a spoon to drizzle the glaze generously over the top of each scone.
  19. Serve and enjoy!

Notes

Always use very cold butter for the flakiest scones.
Do not overmix the dough; mix just until combined.
For best results, consume glazed scones the same day.
If you don’t have buttermilk, add 1 tbsp lemon juice to regular milk and let sit for 5 minutes.
