Sugar Cookie Cups recipe, easy to bake.

Ingredients

Scale
  • 2 ½ cups All-Purpose Flour
  • 1 cup Granulated Sugar
  • 1 cup (2 sticks) Unsalted Butter, softened
  • 1 Large Egg
  • 2 teaspoons Vanilla Extract
  • ½ teaspoon Almond Extract
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 8 ounces Cream Cheese, softened
  • 1 cup (2 sticks) Unsalted Butter, softened
  • 4 cups Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 2-4 tablespoons Milk or Cream
  • ¼ teaspoon Pinch of Salt

Instructions

  • Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or line with mini paper liners. In a large bowl, cream together ½ cup unsalted butter and 1 cup granulated sugar until light and fluffy (2-3 minutes). Beat in the large egg, vanilla extract, and almond extract until just combined. In a separate medium-sized bowl, whisk together 2 ½ cups all-purpose flour, 1 teaspoon baking powder, and ½ teaspoon salt. Gradually add the dry ingredients to the wet, mixing on low speed until a soft dough forms. Take 1-tablespoon-sized balls of dough and press them gently into each muffin cup, creating a cup shape with slightly raised edges. Bake for 8-10 minutes, or until edges are lightly golden brown. Immediately after removing from the oven, use a small spoon or dowel to gently press down the centers again to reinforce the cup shape. Allow to cool in the muffin tin for 5 minutes, then transfer to a wire rack to cool completely.
  • While cookie cups cool, in a medium bowl, beat 8 ounces softened cream cheese and 1 cup softened unsalted butter with an electric mixer until smooth and fluffy (2-3 minutes). Gradually add 4 cups powdered sugar, one cup at a time, mixing on low speed until incorporated, then increase to medium-high. Beat in 1 teaspoon vanilla extract and ¼ teaspoon pinch of salt. If needed, add milk or cream, 1 teaspoon at a time, until desired smooth, pipeable consistency is reached.
  • Once cookie cups are completely cool, frost them. You can use a small spoon to dollop frosting into each cup, or for a more elegant presentation, transfer frosting to a piping bag fitted with a decorative tip. Pipe a generous swirl of frosting into the center of each cookie cup, filling the well. Decorate as desired with sprinkles, fresh berries, chocolate drizzle, or edible glitter. Store in an airtight container.
