Indulge in incredibly soft, melt-in-your-mouth homemade caramels with a rich, buttery flavor that’s surprisingly easy to achieve.

  • 4 cups (800g) granulated sugar
  • 2 sticks (226g) butter
  • 2 cups (480ml) white corn syrup
  • 1 teaspoon kosher salt
  • 2 12 oz. cans (708ml) evaporated milk

Instructions

  1. Line a 9×13 inch pan with parchment paper. Ensure the parchment paper hangs over the edges to create 'handles'. Set the prepared pan aside.
  2. Melt the granulated sugar, butter, white corn syrup, and kosher salt together in a large, heavy-bottomed pot over medium heat.
  3. Stir the mixture gently until all ingredients are combined and the sugar begins to dissolve.
  4. Once the mixture comes to a boil, begin adding the evaporated milk.
  5. Pour in the evaporated milk very slowly, a little at a time, taking approximately 10-15 minutes per can.
  6. Stir the mixture constantly during the entire process of adding the evaporated milk.
  7. After all the milk is added, insert a candy thermometer into the mixture.
  8. Continue to stir and cook the mixture until the candy thermometer registers between 238°F and 240°F.
  9. Monitor the temperature carefully; do not allow it to exceed 240°F.
  10. Immediately remove the pot from the heat once the desired temperature is reached.
  11. Carefully pour the hot caramel mixture into the prepared 9×13 inch pan.
  12. Allow the caramel to cool completely at room temperature.
  13. Once completely cool, transfer the pan to the freezer for 20-30 minutes, or refrigerate for a few hours, until firm but not frozen solid.
  14. Use the parchment paper handles to lift the caramel slab out of the pan.
  15. Cut the caramel into desired small pieces using a sharp, lightly oiled knife.
  16. Serve and enjoy your homemade caramels.
